Ingredients

Gluten Free Mini Citrus Poppy Seed Loaves

  • 40 grams raw almonds
  • 80 grams sugar
  • 2 heaped teaspoons lemon rind
  • 2 heaped teaspoons Orange rind
  • 125 grams Butter, cubed
  • 2 eggs
  • 170 grams Gluten free self raising flour
  • 15 grams poppy seeds
  • 80 grams orange juice, freshly squeezed

Recipe's preparation

  1. Preheat oven to 160 degrees fanbake
  2. Add almonds to bowl. Mill 15 seconds speed 7. Place in a bowl
  3. Add sugar to bowl. Mill 12 seconds, speed 10
  4. Add butter and lemon and orange rind.
    Mix 45 seconds, speed 4
  5. Add eggs. Mix 30 seconds, speed 4
  6. Add ground almonds, gluten free self raising flour, poppy seeds, orange juice
    Mix 15 seconds speed 4, scape bowl and mix again 10 seconds speed 4.
  7. Fill mini loaf tray, makes 9.
    Cook for 20 ins
    Leave in tray for 5 mins before placing on rack

Tip

These can be iced using 150 gr icing sugar with 15 gr orange juice mixed together
