Orange and Almond cake
- 2 oranges, whole skin on
- 4 Eggs, Large
- 250 grams whole almonds, milled in TM
- 250 grams caster sugar
- 1 teaspoon GF baking powder, sieved

Place the 2 oranges into basket and fill jug with water up to one and a half litre mark.
Cook for 45 mins at Varoma temperature speed 3 until oranges feel soft when tested with a skewar
Then discard water and place oranges in TM bowl and blend into pulp for 9 secs at speed 9.
Set aside and allow to cool. This is important.
Place 4 whole eggs with sugar into bowl. Insert butterfly and whick at speed 4 for 2 minutes at least until the mixture looks like lightly beaten cream.
Leave butterfly in place and add ground almonds and orange mixture and baking powder into TM bowl. Mix at speed 4 for 10 secs
Place into a greased and lined 22 cm round cake tin and bake at 190 to 200 degrees centigrade for approx 1 hr. Or you can make 12 muffins baked for approx 20 mins. Test for readiness with a skewer.

Tip
Either bake as a round or square cake or as 12 muffins. Don't open oven door too soon as mixture may sink. Be sure to test for readiness with a skewer.

Such a nice recipe... Yields 19 muffins ( 75 ml capacity)
I reduced the sugar to 100 g,( Stevia).
Rowe_em: possibly the amount of sugar and height in oven if you aren’t using fan forced
Fantastic cake , will be a firm favourite . Definitely happy with sugar reduced to 150g and made great small muffin size cakes

I love this recipe and make it several times. Unfortunately its not suitable for school lunch boxes but great for afternoon tea.
A great idea svuks. I picked a heap of Valencia's of Mum's tree last weekend and we don't eat much marmalade and so this is a great idea to be able to keep some.
I boiled 8 on the stove for 45 mins. Drained them and weighed them into Thermie. I then divided this mix by 4 and bagged up 3 lots for the freezer.
Made this to take to. Trivia night last night. Delicious. Thanks!

DELICIOUS, and so easy. I boil up 8 oranges at a time, puree and freeze (2 oranges at a time) in zip lock bags. That way cake becomes super quick.
I also reduced sugar to 150gm and it suits me just fine. Also sprinkle some almond flakes on top.
