  • 125 g Butter
  • 1 eggs
  • 1 tsp vanilla essence
  • 2-3 bananas, very ripe
  • 210 g gluten free flour
  • 70 g dextrose
  • 1 tsp bicarb/baking soda
  • 1.5 tsp baking powder

Recipe's preparation

  1. Preheat Oven to 180 degrees and grease muffin Tray
  2. Add softened butter to bowl and melt 60 degrees, 2 mins, speed 1 mc on
  3. Add egg, banana and vanill and combine 10 sec, speed 3, mc on
  4. Add dextrose/ sugar, gf flour, baking powder and bicarb/baking soda and combine 10 sec, speed 4, mc on
  5. Scrape down bowl and mix for another 10 sec, speed 4, mc on
  6. Place in greased muffin tray and bake on 180 degrees for 15-20 minutes or until golden

Tip

This recipe is 'sugar free' other than the naturally occuring fructose in the bananas.
Dextrose can be found in home brew section of supermarket isle - it is a good sugar substitute as it is fructose free. You can use sugar instead however this recipe won't be sugar free. If using sugar use 90g.

    These were easy to make, and delicious! I used three bananas and added a teaspoon of cinnamon. I froze them and have since eaten them defrosted and they were still delicious. I was sceptical when I saw how thick the batter was, but have since discovered that cooking with Dextrose makes all batter thicker. Thanks.
