Grans Boiled Fruitcake
- 1 peel of 1 lemon
- 40 g light brown sugar
- 150 g mixed dried fruit
- 120 g unsalted butter
- 0.5 teaspoons bicarbonate of soda
- 0.5 teaspoons mixed spice
- 50 g Rum, Or Sherry
- 50 g golden syrup
- 40 g water
- 140 g self-raising flour
- 1 egg
- 15-20 blanched almonds, For Decoration (optional)
- 1 tablespoons apricot jam, For Glazing (optional)

- · Grease and line a 15cm round tin and set aside (6 Inch)
· Preheat oven to 150oC (130oC fan forced) - Place sugar and lemon peel into mixing bowl, mill 5sec/speed 10
- Add dried fruit, butter, bicarb, mixed spice, rum (or sherry), golden syrup, and water. Cook 10 mins 100c/Reverse/ speed 1

- When cool, add flour and egg, mix 15sec/reverse/ speed 3
- · Pour into prepared tin and level top. (Top can be decorated with blanched almonds)
- · Place in preheated oven and bake 50-60 min (Check after 45 minutes). The cake is booked when a skewer inserted into the centre of cake comes out clean
- Brush top with a little smooth apricot jam to glaze top while still in tin and cake is hot, cool in the tin for 15 minutes then turn onto a rack to completely cool.[/size]
- · Once cool store in an airtight container.

This is a small recipe, it will work perfectly in a 6 inch round tin.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
