Ingredients

Chocolate Brownies

75g Cooking chocolate

  • 150 g margarine
  • 150 g eggs
  • 255 g rich dark brown sugar
  • 150 g SR flour
  • 1 dash salt
  • 1 tsp Vanilla ex
  • 75 g walnuts chopped

Cream Cheese Icing

  • 60 grams Philly Cream Cheese
  • 40 grams Butter
  • 1 tablespoon cocoa
  • 250 grams icing sugar

Recipe's preparation

    Chocolate Brownies from my old Bero Book
  1. Heat oven to 180  degrees

    Grease and line an 8 inch / 20 cm square tin

    Grate chocolate in TM 5-10 secs, speed 8

    Add margarine 60 degrees 2 mins, speed 4

    Add dark brown sugar, SR flour, salt, vanilla and eggs

    4-5 secs speed 5

    Add hand chopped walnuts and blend 1-2 sec speed 4 reverse

    Pour into prepared tin and bake approx 40 mins until firm to touch.

     

  2. Cream Cheese icing
  3. I use a 1/4 bar of Philly cream cheese about 2/3 that amount of hard butter melted in TM 

    Add 1 tablespoon cocoa and icing sugar until it is to your desired consistency. Speed 4 and a few seconds each time scraping down before adding more icing sugar. Remember to place the little MC on!

    Freeze any left overs for emergency icing!

Tip

Separate from tin around edges whilst hot. Leave to cool and turn out onto wire rack with top face down. I ice the bottom of the cake which gives a really flat surface.

Use a serving fork to draw vertical lines and a little knife to etch half and quarter across then draw knife in opposite direction to half again.

    I use bought icing sugar as I found icing sugar made in TM to be grainy too. I've just seen an orange cake recipe that puts coconut in with the icing. I think that would stop the grainy texture for use on other recipes.  Thanks for the comment.

    Just made the icing but it was really grainy. Not sure what we did but it still tasted really yummy tmrc_emoticons.;)
