Ingredients

Banana Bread

  • 70 grams coconut oil
  • 150 grams honey
  • 2 eggs
  • 2 bananas, equals roughly 2 very large bananas
  • 240 grams milk or soy milk
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 260 grams plain flour
  • 1 package blueberries, 1 regular blueberry punnet, more or less (or none!) according to your taste preference

Recipe's preparation

  1. Preheat oven to 160 (fan forced).

  2. Butter or otherwise grease a cake pan such as a 12cm x 22cm loaf tin.

  3. Add coconut oil and mix on the lowest speed Gentle stir setting"Gentle stir setting" for 2 mins, on 40 degree heat for 2 mins (more or less depending on room temperature). This step helps to liquify the coconut oil.

  4. Add honey and mix on speed 5 for 30 seconds.

  5. Add eggs and vanilla, then use speed 7 for 10 seconds.

  6. Add bananas (break/chop into a few chunks before adding). Use speed 8 for 10 seconds.

  7. Add milk, then use speed 5 for 20 seconds.

  8. Add baking powder, salt, and cinnamon. Mix on speed 4 until combined.

  9. Use speed 6 for 2 seconds, then 2 seconds in reverse, then repeat that process a couple of times. The idea is to get some air into the mixture.

  10. Add the flour and use speed 4 for 5 seconds to mix. If you still see some dry flour, mix again for 2 seconds at a time, checking each time, until it all looks mixed (but it can be still lumpy!) Be careful not to overmix, you can work out lumps in about 5 stirs with your Thermomix spatula.

  11. Take the Thermomix bowl off the stand and lift the lid off. Gently mix the contents with your spatula, just to make sure there are no pockets of unmixed dry flour for example.

  12. Add blueberries, and mix in gently until just combined.

  13. Pour into prepared baking dish/tray.

  14. Bake for between 50 min to 75 min, depedning on your tray. I find with the silicone tray it can need even longer than 75 min but with a metal tray that would be too much.

Tip

Use VERY ripe bananas for the best result!

You can use choc chips or walnuts or other options instead of blueberries if you prefer of course.

This recipe makes 8 large slices, the size you might find if you purchase banana bread in a cafe.

    Thanks for trying my recipe Smileeem! I am new to this too, I have tried quite a few recipes, and find the banana bread in the basic Thermomix rather "bouncy" so I was trying to avoid that. If you can suggest anything that would make the recipe above easier to use, please let me know? I can edit it.I will play around with the recipe to see if I can make it less dense, thank you for the feedback!

    I made this yesterday. It tasted nice but was very dense and did not rise like the picture. It might ob been the 3 frozen bananas I was trying to use up. I also found the recipe bit hard to follow as I'm new to all this.
