- 4 whole bananas, peeled
- 130 grams coconut oil
- 75 grams Rapadura Sugar
- 2 eggs
- 220 grams wholemeal or spelt, plain flour
- 2 teaspoons baking powder
- pinch sea salt
- 1 teaspoon bicarb soda
- 150 grams Almond milk, or soy/rice milk
- 2 teaspoon vanilla extract
- 20 grams LSA
- 30 grams Coconut
- 5 grams chia seeds

Preheat overn to 180c. Grease a loaf tin and set aside.
Place bananas into mixing bowl and mash 5 sec/speed 6
Add coconut oil and sugar and beat 20 sec/speed 4. scrape down sides of bowl.
Add eggs and mix 10 sec/speed 4
Add all remaining ingredients and combine 20 sec/speed 4.
Pour into prepared loaf tin and bake 50-60 minutes, or until inserted skewer comes out clean.
Allow to cool in tin for 30 minutes before turning out onto a wire rack. Serve warm or allow to cool completely before placing into an airtight container to store.
Method
Tip
Coconut Oil can be subbed with Butter or Nuttelex.
Banana Bread can be eaten fresh or toasted.
