Ingredients
- 250 grams sweet potato, Grated
- 85 grams dark chocolate, chips or cut up into pieces
- 2 Eggs or (2 no eggs)
- 1/3 cup coconut sugar
- 1/3 Cup Apple Sauce
- 1/3 Cup Coconut oil
- 2 Cups Flour (Any kind of flour, GF, wholewheat ect)
- 1 teaspoon vanilla extract
- 2 teaspoons cinnamon
- 1 teaspoon Nutmeg
- pinch salt

Preheat the oven to 175°C
Grease muffin tray or line with patty cake liners
Peel Sweet Potato and cut into medium pieces, grate 5secs/Speed 5. Empty TM and set aside, dont wash
If your chocolate is in a block, grate 3secs/Speed 5, empty TM and set aside
Put Eggs, Coconut Sugar & vanilla into TM bowl, mix 10secs/Speed 4
Add apple sauce & coconut oil mix 10secs/Speed 4, scrape down sides 5secs/Speed 4
Add Flour ( 2 cups was about 280g), Cinnamon & Nutmeg mix 10secs/Speed 2
Add sweet potato & chocolate, mix "Counter-clockwise operation" 25secs/Speed 3 or until combined
Spoon into pre prepared muffin tins or silicon moulds
Bake at 175°C for 25-30 minutes
Check muffins at 20 minutes, insert a skewer and if it comes out clean they are ready. If not put back into the over for another 5-10 minutes.
Tip
The muffins are rustic looking.
This recipe can be vegan, if you substitue the eggs for No Eggs and Gluten Free if you use GF SR Flour.

It'd be great if this recipe could be rewritten with weights instead of the cup measurements. Nice muffins. I used rice malt syrup for sugar and yoghurt instead of applesauce, to minimise the fructose hit. Used wholemeal SR flour & 2 cups ended up around 320g, but then the mix was quite stodgey so added a splash of milk. Perhaps the 280g of flour is the way to go.
Sorry, I used Self Raising flour. If you use plain flour add 1 teaspoon of baking powder and 1/2 a teaspoon of bi carb soda.
