- 100 g almonds
- 1 portions lemon zest, grated
- 20 g sweetener
- 1 level tbsp Coconut Flour
- 45 g Butter
- 4 portions lemon juice
- 150 g Butter
- 8 egg yolk
- 1/2 level teaspoons xantham gum

- Pre heat oven 180 degrees
grease and line loaf tin
Blits 20 g sweetener , speed 10 ,10'secs , set aside
Blitz 100g almonds , speed 10 , 10 secs
put in bowl set aside
Zest one lemon , speed 8.5 10 secs put in bowl set aside
weigh 45g butter , melt 85 degrees 1.30 mins stir
add the zest , almond meal and 20 grams sweetener into bowl , stir 10 secs to combine
wet hands and press into prepared tin, bake for 10-12 mins till cooked
meanwhile blitz 60g sweetener , 10 secs speed 10 , set aside
zest 2 more lemons , speed 8.5 10 secs . Scrape down sides , add sweetener , 1/2 cup lemon juice , 150g butter , 8 egg yolks , 1/2 tsp xantham gum . Go to thicken mode and turn speed dial
once base has cooled pour lemon mixture over base and cook approx 10 mins or untill the mix has set .
allow to cool. Dust with left over icing sugar , and portion
keep in container in the fridge
