Ingredients

Rusks

  • 500 g Butter, Make your own and reserve buttermilk
  • 500 g buttermilk, Reserved from butter
  • 370 g Coconut sugar, or your choice
  • 1000 g Self Raising Flour
  • 1 tsp salt
  • 3 large eggs
  • 2 tsp baking powder
  • 1 g lemon juice
  • 100 g uncooked oats
  • 100 g pecan nuts or almonds
  • 240 g All-bran flakes

Optional extras

  • 100 g Saltanas
  • 60-100 g sunflower seeds, to taste

Recipe's preparation

  1. Line a rectangular baking tin with baking paper.
    Preheat oven to 200°C.

    1. Place butter into mixing bowl. Melt for 1.5min/50°C/speed 4. Let it cool down for a few mins.

    2. Add eggs, sugar and buttermilk to the melted butter. Mix 20 secs/speed 4.

    3. Add flour, baking powder, salt, All Bran, uncooked oats and pecan nuts.     Add the optional saltanas and sunflower seeds at this point too.

    4. Pour into large oven pan (330 x 280 mm), lined with foil or baking paper and bake for 25mins.

    5. Reduce heat to to 180°C for a further 25mins or more until golden brown.

    6. Cool slightly before turning out and let it cool down.

    7. Slice into slices and then cut into fingers. Place the fingers on drying rack and dry in your oven at to 80°C until the rusks are dry, crunchy and brittle but not burnt. Once they have cooled down, place them in an air tight container.


    ENJOY dunked in a cuppa or just eat crispy!

Tip

I make two separate batches (one with extras and one just plain buttermilk) and bake them together. Baking and drying out time stays the same and you get double the quantity for your effort! This is handy as they will disappear fast: very yummy!

Side note: You can reduce the All-bran by half (that is, reduce by 4 cups) and add 2 cups of muesli.
