Loaf
- 2 lemon, zest of two lemons
- 120 g Unsalted Butter - cubed
- 235 g castor sugar
- 2 eggs
- 250 g plain all purpose flour
- 1 teaspoon baking powder
- 1 pinch salt
- 100 g Milk
- 1 Juice, of one lemon
Lemon icing
- 60 g Icing/confectioners sugar, Sifted if lumpy
- 1 lemon, juice of 1 lemon

- Soak lemon zest in lemon juice while prepping
Preheat oven to 180C
Line a loaf tin
Place lemon juice and zest, butter, sugar and eggs and mix for 2 min / speed 4
Scrape sides down with spatula and mix for further 10 sec /speed 4
Add sifted flour, baking powder, salt, and milk and mix 10 sec / speed3
Scrape sides down and do for further 5 sec / speed 3
Spoon into pan
Bake for 1 hour
While baking, mix together juice of 1 lemon and icing/confectioners sugar
Once loaf has cooled, spread/pour lemon icing over the loaf

Lovely! Will make again but add more lemon juice. Did add more milk as batter too thick. Yes it does have a lovely crunchy top so I didn't add icing either. Thanks

I must have done something wrong with this as it was very dense and heavy. Is it supposed to be like that? I found the batter very thick as I was trying to spoon into the tin and the end result was so heavy 😞 Any tips on how to improve next time?
Lovely easy recipe. I didnt bother with the icing as mine had a nice crunchy top and we didn't wait for it to cool before eating it up!
Great recipe, lovely lemon flavour. I skipped the icing, the top was deliciously crunchy, it was lovely warm. Would make a nice dessert with some ice cream. I used almond milk instead of cows.
Love this loaf! Didnt put icing mixture on and put in the kids lunch box. They love it too!

Lovely recipe, as stated below it does not specify when to add the juice into the cake so I just add it at step 2 (Scrape sides down with spatula and mix for further 10 sec / speed 4) and it works out fine. I had heaps of lemon so juiced 3 to make it extra lemony!
Worked as described. ? Where to add lemon juice to the cake batter. I took a stab in the dark and it seemed to work out fine. Lovely for afternoon tea.
