Ingredients

  • BASE
  • 110 g sugar
  • 170 g plain flour
  • 120 g Butter
  • 1 tbsp Milk
  • TOPPING
  • Zest 1 lemon
  • 300 g sugar
  • 1 1/2 Tbsp Cornflour
  • 170 ml Cream
  • 6 eggs
  • 180 g lemon juice

Recipe's preparation

  1. Preheat oven to 170C

    Prepare Base:

    Place sugar into TM bowl and mill for 5seconds on speed 9

    Add flour, butter and milk and mix for 10 seconds on speed 6.

    Set dial to closed lid position and mix for 20 seconds on Interval Speed.

    Press into a 20cm x 30cm slice tin lined with Baking Paper.

    Bake for 25 minutes or until golden brown.

    TOPPING

    Place sugar  and lemon zest into TM bowl and mill for 20 seconds on speed 9. Set aside.

    Place cornflour and cream in bowl and mix for 20 seconds on speed 2.

    Add remaining ingredients and cook for 16 minutes at 100C on speed 2 or until the mixture thickens slightly.

    Pour over the base and bake for 5 minutes or until the topping is just set. 

    Cool in the tin and cut into 24 slices.

     

     

     

Tip

I have already reduced the sugar a little from the original recipe, but you could probably reduce it a little more.

    This recipe needs an extra step: the lemon mixture needs to be mixed together at a higher speed to blend the egg in before it cooks. Same as others mentioned, I ended up with egg white clumps all over the blades and mixed into the mixture... a bit yucky. I love the original Donna Hay recipe, and I think this conversion would be fine if mixed before cooking.

    Not a huge fan as something went weird with the egg... it seemed to cook before it was properly blended in so I had white parts of cooked egg in my slice tmrc_emoticons.(

    This was scrumptious but wondering if the quantity of lemon juice was too high as mine didn't set properly on top & was v sticky & difficult to cut as the base had got quite hard (I left in over further 5 mins to set top more). And as I didn't have enough lemons I only added 110g of juice not the suggested 180g.

    Any comments? thanks.

    Great slice I reduced the sugar by half and it still was great
