Limoretti (Limoncello, lemon amaretti)
- 4 egg whites
- 2 lemons, zested
- 30-60 g Limoncello
- 300 g caster sugar
- 400 g almond meal
- icing sugar, to serve

- 1. Line a large baking tray with baking paper and preheat oven to 180°C.
2. Zest your lemons in a bowl and set aside
3. Put butterfly whisk into "Closed lid" . Add egg whites in the "Closed lid" and whip on speed 3.5/3-4 minutes. Keep a close eye on your egg whites to be sure not to overwhip. Remove butterfly whisk.
4. Add caster sugar and mix on speed 3/30 seconds.
5. Add limoncello and the lemon zest you previously set aside. Mix on speed 3/10 seconds.
6. Add almond meal and mix on speed 4/20 seconds or until combined. The dough should be thick and very sticky.
7. Using a teaspoon, scoop out the dough and roll it using your hands into a slightly flattened ball shape (yes, this is messy). Place on the tray not too close together, allow room for the biscuits to expand slightly.
8. Bake in the oven for 15 minutes, until light golden brown.
9. Dust with icing sugar to serve

These biscuits are super quick and easy and so tasty!
Crunchy on the outside and soft on the inside, they are so light, delicious and a crowd favourite.
Don't double the recipe as it cannot all fit in the "Closed lid" unfortunately.

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
