Simple Lemon Cheesecake-No Bake
- 80 g Butter, (125 g if doubling biscuits)
- 125 g Biscuits of choice, (double if the biscuit mix is to go up the sides
- 3 tsp grated lemon zest
- 1/4 --- cup brown sugar
- 500 g cream cheese
- 1/4 --- cup caster sugar
- 1 cans sweetened condensed milk (410g)
- 300 g cream
- 3 --- lemons
- 4 level teaspoons gelatine, (or 4 sheets)

- Melt butter 3 min 50 degrees/speed 2
Add biscuits, zest and brown sugar, mix 10 sec / speed 5. Scrape sides of bowl and repeat.
Place into prepared tin, press into place either only in the base or up the sides as well. Refrigerate or freeze tin. - Cheesecake Filling
Juice lemons and add gelatine to juice, mix and set aside. If the gelatine doesn't dissolve, heat it up in the microwave in short bursts and then set aside.
Add cream cheese and caster sugar to bowl, chop for 30 sec / speed 5, scrape sides and repeat until smooth.
Add Butterfly, condensed milk and cream, blend for 30 sec / speed 4, scrape sides and repeat until smooth.
Add lemon juice and gelatine, blend for 30 sec / speed 4, quickly pour over base and refrigerate for at least 2 hours until set & enjoy.

Tip
Use Gluten Free biscuits for a Gluten Free version.
Easily make this into cupcake trays to make small portions for parties.
Can be frozen and defrosted when ready to eat, great way to hide goodies to make them last longer.
Can use lower fat cream cheese and skim sweetened condensed milk to make a milder flavour.
