Ingredients

Pastry

  • 290 grams SR flour
  • 120 grams Butter
  • Juice half a lemon made up to half cup with water
  • 1 tablespoon icing sugar

Filling

  • Jar of lemon butter or jam

Cake mixture

  • 180 grams almonds
  • 100 grams biscuits or plain cake
  • 180 grams Butter
  • 170 grams sugar
  • 4 teaspoons lemon rind
  • 2 eggs
  • 120 grams SR flour
  • 4 tablespoons lemon juice
  • 4 small pieces lemon rind

Icing

  • 2 cups icing sugar
  • 2 teaspoons soft butter
  • Boiling water
  • coconut for decoration

Recipe's preparation

    Pastry
  1. 1. Add flour, butter and icing sugar to bowl and mix 10 seconds speed 6 or until mixture resembles fine breadcrumbs.

    2. Add in lemon juice and water mixture gradually - mixing 3-4 seconds on Sp 4 until it comes together (don't add all at once as you may not need it) - knead 30 secs.

    3. Transer dough to thermomat or floured bench and shape into a ball.

    4. Wrap in cling film wrap and chill for at least 15 minutes.

    5. Once chilled roll out dough thinly and cut out 7cm rounds and place in greased patty pans.

    6. Place 1 teaspoon of lemon butter or jam onto pastry cases.

  2. Cake mixture
  3. 1. Mill almonds and cake or biscuits for 10 seconds speed 9. Set aside.

    2. Mill sugar and lemon rinds10 seconds speed 9

    3. Add butter and chop 5 seconds speed 5

    4. Insert butterfly and cream the butter, sugar, lemon rind and eggs for  2 minutes  on speed 3.

    4. Stir in milled almonds, cake/biscuit crumbs, flour, lemon juice for 20seconds on speed 6.

    5. Drop tablespoonfuls onto each pastry case.

    6. Bake in pre-heated oven 180°C for 20 minutes or until cooked.

  4. Icing
  5. 1. Add enough water to icing sugar and butter to make a smooth icing 

    2. Decorate cakes with icing and dip in coconut.

    3. Enjoy

Tip

My Mum used to make these and all the family devoured them eagerly - they have such a 'melt in the mouth' sensation with a wonderful surprise of lemon butter or jam with that first bite. Mum used to often just top with a butter cake mixture - so give that a try too. Icing is not necessary but I think they look so pretty with some icing.
