Ingredients

Biscuits

  • 250 gram Butter, softened
  • 60 gram icing sugar
  • 225 gram plain flour, Sifted
  • 75 gram Corn Flour

Filling

  • 60 gram Butter, Softened
  • 75 gram icing sugar, Sifted
  • 1 teaspoon lemon zest
  • 3 teaspoon lemon juice

Recipe's preparation

    Biscuits
  1. Preheat oven to 180C. Line 2 baking trays with baking paper.

    Chop butter into cubes and place in TM bowl. Chop for 10 seconds on speed 5. Scrape sides of bowl and add icing sugar. Insert butterfly. Mix on speed 4 for 1 minute. Remove butterfly. Add sifted flour and corn flour and mix 10 seconds on speed 5-6 until dough forms together. Pipe or roll out biscuits onto lined trays and bake in oven for 12 minutes or until lightly browned. Remove from tray and cool on rack. Once biscuits are cooled sandwich together with filling. 

  2. Filling
  3. Place chopped butter into TM bowl and chop for 6-8 seconds on speed 5. Add remaining ingredients with butterfly and mix for 1 minute on speed 4. Spread filling over base of biscuit and sandwich together. 

Tip

Add passionfruit pulp to icing mix instead of lemon juice. 

Spread some jam on biscuit before adding icing.
