Ingredients

Cake Batter

  • 50g pistachios, roughly chopped
  • 50g pecans, roughly chopped
  • 50g flaked almonds
  • 4 cardamom pods, seeds only
  • 160g Granulated sugar
  • 150g self-raising flour
  • 1/2 tsp bicarbonate of soda
  • 80g ground almonds
  • 150g slightly salted butter
  • 20g olive oil
  • 30g yoghurt
  • 4 large eggs
  • 1 lemon

Topping

  • 10g pine nuts, toasted
  • 50g sugar
  • 30g water
  • 1/2 lemon, juice only
  • 1/2 tsp Rose Water
  • 1/2 tsp Orange Blossom Water

Recipe's preparation

    Cake
  1. Roast the pistachios, pecans & flaked almonds for 15 minutes at 150C.

     

  2. Peel small strips of lemon zest and blitz with 40g of the sugar & the cardamom seeds 10 sec/speed 10.

     

  3. Juice the lemon and add this along with all the remaining ingredients except the roasted nuts to the TM bowl. Insert butterfly whisk and mix 50 sec/speed 3, scraping down halway through.

     

  4. Add the roasted nuts and mix 10 sec/speed 1 Counter-clockwise operation"Counter-clockwise operation" .

     

  5. Transfer to a greased & lined 20cm round cake tin and bake at 170C for about 50 minutes or until a skewer comes out clean.

     

  6. Topping
  7. In a small saucepan bring to a boil the lemon juice, sugar and water.

     

  8. Remove from heat and add the rose & orange blossom waters. Let cool.

     

  9. When the cake comes out of the oven, leave to cool slightly for about 10 minutes, then remove from the tin, drizzle with the syrup and scatter over the pine nuts.

Tip

Experiment with different nuts in the cake to suit your preference.

The lemon in the cake and syrup could be replaced with orange or lime to mix things up a little.

If you don't have the flavourings for the syrup, just increase the amount of citrus juice (and if necessary the sugar) for a nice flavour.
