Ingredients
Banana Bread
- 125 grams Butter
- 3 Super Ripe Bananas
- 1/2 cup sugar
- 1 egg, lightly beaten
- 1 teaspoon vanilla extract or paste
- pinch ground cinnamon
- pinch ground cloves
- 1 1/2 cups GF flour
- 1/4 Cup desiccated coconut
- 1/2 Cup Almond meal
- 1 teaspoon baking powder
- 1 teaspoon xanthan gum, (if not already in GF flour blend)
- pinch salt
- handful walnuts or pecan nuts, chopped, (optional)

1. Preheat oven to 175C (350F) and line a loaf tin with non-stick baking paper (or grease and flour lightly). I like using baking paper because you can leave some overhanging and then simply lift it out at the end (no mess!).
2. Melt butter in TMX, 3 minutes, 80 degrees, speed 1. Set aside.
3. Mash bananas in TMX, 10 seconds, speed 3. Add the melted butter, sugar, egg, vanilla, cinnamon and cloves and mix to combine, 10 seconds, speed 4.
4. Add in the flour, xanthan gum (if using), coconut, almond meal, baking powder and salt. Mix on reverse "Counter-clockwise operation" , 10 seconds, speed 4. The batter will be quick thick. Scoop into the baking tin and sprinkle with the chopped walnuts or pecans, if you’re using them.
5. Bake for 50 mins to 1 hour or until a skewer inserted leaves a few crumbs. Remove from the tin and cool on a wire rack.

Tip
Can be made egg-free by substituting 1 tbsp ground chia seeds in 3 tbsp water (let sit for 5 minutes before using).
