Ingredients

Dough

  • 190 grams Butter
  • 110 grams brown sugar
  • 1 level teaspoon vanilla essence
  • 1 egg, large
  • 200 grams Self Raising Flour
  • 110 grams plain flour
  • 35 grams Desiccated or shredded Coconut

filling

  • 40 grams Butter
  • 250 grams icing mixture
  • 1/2 teaspoon vanilla extract
  • Strawberry Jam

Recipe's preparation

    preheat oven, 180 degrees, line 2 trays with non stick paper
  1. to theClosed lid add room temperature butter and the sugar, speed 4 until light and fluffy approx 1 minute, scrape down the sides if needed. 

  2. with the speed on 1, add the egg and vanilla through the m/c hole, mix speed 1 for 30 seconds, then speed 4 for 10 seconds

  3. add the flours and coconut, mix speed 1 until combined, approx 40 seconds, then speed 4 for 15 seconds.

  4. take the dough out of the bowl and using floured hands, pinch off a small amount and roll into a ball, flatten and then rough up the surface using a fork. You should get 48 rounds. 

  5. Place onto 2 lined trays, allowing a little room for spreading, bake 10-15 minutes, depending on your oven. Allow to cool on the trays for 5 minutes before placing on racks to cool.

  7. place all ingredients into the bowl and mix on speed 4 until pale and well combined, scrape down the sides of bowl as needed.

  8. joining the halves
  9. Match your biscuits up in similar sizes, place a little strawberry jm (no more than 1/2 a teaspoon) on each half, then put the icing filling on the other half and sandwich them together.

Tip

Have your butter and egg at room temperature.

    Quick & easy if you have room temp butter. I used my 1 tbsp measurer and baked about 6 the first night then left dough in fridge for the next couple of days making fresh biscuits each day. Used icing from another recipe but will try this one next time. Husband loved them. Thank you

    thank you so much for this amazing biscuit recipe this is now one of my favourite and i have made 3 batches. I added less icing mixture for the filling.

    Beautiful biscuit! So easy to make and quick! I added more vanilla essence into my filling as the 40g of butter and 250g flour didn't combine well with just a 1/2 teaspoon of vanilla essences. Probably added 2 to 21/2 teaspoons of vanilla .. worked a treat!

    Hi, these are awesome. I also found the 40 grams of butter insufficient, so I added 20 mls of milk, which was perfect. I suspect this all probably depends on the icing sugar you use!

    Tip: I decided to use a dessertspoon to make a consistent size, and this also gives a great oval shape!
