- 2 large eggs
- 125 gram thickened cream
- 3/4 Cup castor sugar
- 1 level tsp vanilla, Extract or Essence
- 1 cup SR flour, sifted

I'm cooking this todayRecipe's preparation
- 1. Preheat Oven to 180deg, Line a 12 Cup Muffin tray with Patty Pans.
2. In TM bowl Add Eggs, Cream, Sugar & Vanilla and Mix 3min/speed 3-4.
3. Add sifted Flour to TM bowl and Mix 2min/Speed 2-3.
3. Fill Patty Pans 3/4 full and bake in the oven for 15-20min or until Golden.
ive done these in different Ovens and cookin time depends on the oven.
Buttercream Icing On my Cupcakes Is the one from The EDC and i did it with Tri-Colour usung a Wilton 1M Tip and Wilton Disposable Bags.
Mums Fluffy Pancakes
Tip
Make Sure you sift the Flour and Dont leave Cupake Mix sitting for an Extended time as i have noticed if i have done it myself they dont come out as fluffy.
