Nanna Mary’s Banana Cake
- 235 g white sugar
- 125 g unsalted butter, Softened
- 1 egg
- 230 g plain flour
- 1 level teaspoons bicarbonate soda
- 1 level teaspoons baking powder
- 30 g Milk
- 3 --- ripe bananas
- 240 g icing sugar
- 30 g Boiling water
- 1 level tablespoon dessicated coconut

- Step 1. Preheat oven to 180 degrees and grease and line a 20cm tin.
Step 2. Add sugar and softened butter to the bowl and cream together 1min speed 4 and scrape down the sides of the "Closed lid"
Step 3. Add the egg and beat for 15 secs speed 4. Scrape down the sides of the "Closed lid"
Step 4. Set the time to 40 secs speed 4, remove the MC and while the blades are moving add broken up pieces of banana.
Step 5. Add in flour, bi-carb soda, baking powder and milk and mix for 30 secs speed 4.
Step 6. Scrape down the sides of the "Closed lid" and mix for 10 secs speed 4.
Step 7. Pour into prepared tin and bake for 45 mins or until a skewer comes out clean.
Step 8. Allow cake to cool in the tin for 10 mins and then remove from tin and cool completely on a cooling rack.
Step 9. To prepare icing, add icing sugar to the clean "Closed lid" and break up the lumps 10 secs speed 7.
Step 10. Add boiling water and mix 30 secs speed 3. Leave icing to thicken in the bowl for a few minutes.
Step 11. Pour icing over the cooled cake and sprinkle with coconut.
