Ingredients

Muffin mix

  • 375 g low-fat milk
  • 40 g vegetable oil
  • 1 egg
  • 2 Overripe Medium Bananas
  • 250 g oat bran
  • 15 g baking powder
  • 110 g raw sugar
  • 50 g walnuts (chopped)
  • 1 teaspoon ground cinamon
  • 2 tablespoon Toasted Muesli, (optional for topping)
  • 3 teaspoon Demerara or raw sugar, (optional for topping)

Recipe's preparation

  1. 1. Preheat oven to 180°C and line 2 muffins tins with 18 muffin size patty pan cases.

    2. If walnuts are not already chopped place them in the mixing bowl Closed lid"Closed lid" and chop on Speed 3/3-5 seconds until you have roughly chopped the walnuts. Set aside chopped walnuts in another bowl. 

    3. Add milk, oil, egg, and bananas to the mixing bowl Closed lid"Closed lid" and mix on Speed 4/10 seconds.

    4. Add oat bran, baking powder, sugar and cinamon to mixing bowl Closed lid"Closed lid" and mix on Speed 3/10 seconds.

    5. Add reserved chopped walnuts to mixing bowl Closed lid"Closed lid" and gently fold on Speed 3/Counter-clockwise operation"Counter-clockwise operation" /5 seconds.

    6. Spoon mixture into 18 muffin cases to approx 3/4 full. Sprinkle toasted muesli and extra sugar onto of muffins if using and bake for approx 18-25minutes. Test if cooked by inserting a wooden skewer or toothpick into the middle of several muffins. If the skewer comes out clean the muffins are cooked. If not return to the oven for 2-3 minutes and retest.

    7. Cool muffins in tin for 5 minutes, then remove to a wire rack to cool completely. Muffins will colapse a little which is normal.   

Tip

Muffins are best eaten on the day baked.

Left over muffins are recommended to be frozen on the day of baking to retain freshness. Heat frozen muffins in a microwave for about 1 minute so that they are a little warm.

Variations

Cooked pumpkin can be substituted for the 2 bananas. Use about 3/4 cup of cooked pumpkin and add in at step 3 instead of bananas.

Chopped dates also taste great with this receipe and can be added to both the banana and pumpkin versions at step 5. Use approx 12 dates or 75g.

Add 50g of dark choc chips at step 5 with the walnuts if you want a little chocolate indulgence.

Apple and berry is also a great combination. Just add 1 chopped apple (granny smith or pink lady works well) and a handful of frozen berries (blueberry, blackberry, rasperberry or a mix all work) at step 5. You could chop the apple with the walnuts at step 2 and then add it back in at step 5 with the berries.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     So glad you liked this recipe. I've just added some variations to the recipe but you can add lots of different fruits and nuts to suit your own taste.

    The muffins are just great! I didn't have 250g of oat bran, just 110g, and added plain wheat flour for making cakes. Delicious!  tmrc_emoticons.)
