Ingredients

Lamb Marinade

  • 1.5 kg boned lamb leg, cut into 3cm pieces
  • 2 cloves garlic
  • 2-3 sprigs fresh rosemary
  • 2-3 sprigs fresh mint
  • 210 g redcurrant jelly
  • 20 g orange juice, approx 1/2 an orange
  • 20 g olive oil
  • 20 g Worcestershire sauce
  • salt & pepper, to taste

Flat Bread

  • 300 g self-raising flour
  • 260 g Greek style yoghurt

Recipe's preparation

  1. 1. Combine the garlic, mint and rosemary in the Closed lid"Closed lid" and chop with MC on for 6 sec / speed 7.

    2. Add redcurrant jelly, orange juice, olive oil, worcestershire sauce, salt and pepper to Closed lid"Closed lid" and mix 10 sec / speed 2.

    3. Place lamb in a large zip lock bag or bowl and add TM marinade. Mix well and place in fridge for a minimum of 30 min but can be left overnight.

    4. Drain the lamb, reserving the marinade. Add the reserved marinade to the Closed lid"Closed lid" and cook with MC off for 5-10 min / Varoma / speed 1, until thickened slightly.

    5. Wash and dry the TM bowl. Add the self-raising flour and yoghurt to the Closed lid"Closed lid" . Knead for 1-2 min/Dough mode"Dough mode" or until combined and a smooth dough has formed.

    6. Turn out dough onto a ThermoMat or clean surface. Divide dough into 6 even portions. Roll out each portion into an 18cm disc. Cook on a pre-heated BBQ plate or dry frypan for 2 min each side or until lightly charred. Repeat with remaining dough.

    7. Thread the lamb onto pre-soaked bamboo skewers and cook on a BBQ or grill pan. Turn and baste the skewers with the thickened glaze until cooked to your liking and slightly charred.

Tip

This lamb marinade is really flexible and can be used for skewers or butterfly the lamb leg and marinade it whole and either BBQ or oven roast for an alternaive lamb roast dinner.

Serve this dish with your favourite Thermomix chopped salads such as coleslaw, beetroot or broccoli for a really easy Easter Sunday lunch menu.

    Made the lot, yum yum yum 😋 we used cranberry sauce and a little homemade mango chutney as woolies didn’t have red current and they were delicious 🤤 😋 great flatbreads as well. I’m gonna look for redcurrent and do it again 😁

    I used this recipe for the flatbread only, and it is really good- much easier than doing it by hand! I have made it twice- 1st time I only had enough yogurt to make half the quantity, but it turned out perfect. The 2nd time the dough didn't come together as well, so I added a touch more yogurt to adjust. You have to be very careful when doing this as a touch too much yogurt makes it too sticky. I also add a splash of olive oil and sprinkle of salt. My husband is addicted to this bread! Thank you 😊
