Ingredients
- 60 grams Coconut Flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 4 eggs
- 90 grams Maple syrup
- 60 grams coconut oil, melted
- 2 tablespoons Almond milk
- 1 1/2 teaspoons vanilla extract or paste

Preheat oven to 180 degrees celcius and line a muffin tin with 8 cups and spray the insides with coconut oil to prevent sticking.
Whisk together the coconut flour, baking powder and salt 10 seconds speed 4.
Add all other ingredients and mix speed 5 10 seconds.
Pour the batter into the muffin cups, dividing equally. Bake for 17-20 minutes until a toothpick inserted into the centre comes out clean.
Place the muffin tin on a cooling rack and allow to cool for 10 minutes. Remove the cupcakes from the tin and cool completely before icing as desired.

lovely and moist cake, can barely tell it's grain free. I topped mine with the basic cream cheese frosting mentioned with a little lemon juice added. delicious
