Ingredients

Peach Kuchen

  • 250 g sugar, keep 50g aside for topping
  • 100 g fresh coconut, or 40g desiccated coconut
  • 250 g Butter, softened
  • 250 g SR flour
  • 825 g tinned sliced peaches
  • 1/2 tsp ground cinnamon
  • 250 g sour cream
  • 1 egg

Recipe's preparation

    Peach Kuchen
  1. Preheat oven to 180 deg C.  Lightly grease and liine a lamington tin with baking paper.  Set aside.

     

    Toast coconut in oven.

     

    Place sugar into TM bowl  for 10 seconds on speed 9.  Add flour and blend together for 10 seconds on speed 7.  Add butter and toasted coconut and mix for 10-15 seconds on speed 6.

     

    Place crumble mixture into prepared tin.  Using the back of a spoon press into base and up sides of tin.  Cook in moderate oven for 10-15 minutes.

     

    Arrange peach slices on semi-cooked pastry, sprinkle witj sugar and cinnamon.  Blend sour cream and egg 10-15 seconds on speed 4 and pour over peaches.

     

    Cook in moderate oven for 10-15 minutes until topping is set.

    Loved it.
    Pastry was divine, crunchy and sweet. I used diced peaches as that's what I had, and lactose free sour cream.
    Will definately make again and try other fruits as well.

    Very nice! I cooked the base for a further 10minutes before adding the peaches etc. I also reduced the sugar by half and still very sweet.

    Thank you for the pastry section of your recipe. Used this as the base for a pear tart. Loved it. My husband absolutely enjoyed it!!!

    SUPER YUM!! A real treat! This is very easily adapted to be GLUTEN FREE using White Wings Self Raising Gluten Free Flour.
