Rock Cakes
- 225 g Self Raising Flour
- 1 tsp baking powder
- 115 g unsalted butter, cut into cubes
- 115 g sultanas
- 75 g caster sugar
- 1 zest of orange, grated
- 2 eggs

Preheat oven to 200C. Cover baking tray with baking paper and set aside
Place self raising flour, baking powder and cubed butter into bowl"Closed lid" . Press Turbo a few times until mixture resembles breadcrumbs.
Add sultanas, caster sugar, organge zest and egg and mix on Speed 4/ 10 seconds, or until mixture is combined.
Place walnut sized mounds of mixture onto baking tray, leaving space for spreading. Bake for 15-20 minutes or until golden brown. Cool on wire rack
Tip
If desired, add 50g glace cherries with sultanas

A go to recipe of mine now. I use mixed fruit as that is what I used in my non thermo days. Love this one as uses whole eggs instead of separating to use. Have been making rock cakes for years but thermi makes it easier again. Always a treat at work.

Rock cakes were very easy and delicious. It made 24 and they're perfect. I didn't have an orange to zest so used lemon rind instead. The sultanas did get a bit broken and some pulped so next time I'd at at end or just use reverse speed. Thanks
