Ingredients

  • 450 g chorizo sausage, roughly sliced
  • 1/2 red capsicum, roughly chopped
  • 2 spring onions, white part only
  • 1 lemon, rind
  • 1 mint leaves, handful
  • 4 sprig coriander
  • 25 g panko breadcrumbs
  • 2 sheets Puff pastry
  • 1 egg, lightly beaten

Recipe's preparation

  1. Preheat oven to 200C/ 180C fan Forced. Line a baking tray with baking paper

     

    Add lemon rind, mint leaves and coriander to bowl Closed lid"Closed lid" and chop Speed 8/ 8 seconds. Set aside.

     

    Remove sausage skin from meat and discard. Place sausage meat, capsicum, spring onions in bowl Closed lid"Closed lid" and press Turbo a few times 

     

    Add the reserved lemon and herbs and the breadcrumbs and mix on Speed 5/ 4 seconds (or until combined)

     

    Cut pastry sheets in half lengthways and spoon 1/4 of sausage mixture along one long side of pastry. Brush a little egg on the opposite side to seal pastry when rolled.  

     

    Cut into 6 pieces and place on baking tray.

     

    Repeat with remaining pastry and mince mixture. brush top of pastry with egg. 

     

    Bake for 20 - 25 minutes or until pastry is puffed and golden.
