Ingredients
Cookies
- 250 grams Butter
- 250 grams Self Raising Flour
- 60 grams cocoa (can add more if you want)
- 10 grams strong coffee granules
- 62.5 grams Boiling water
- 125 grams sugar
- 185 grams Desiccated Coconut
- 125 grams oats
- 400 grams chocolate to melt (for middle of cookies)

I'm cooking this todayRecipe's preparation
Cream butter and sugar - 25 seconds on speed 4 - go longer if need be.
Add flour, coconut, coffee and cocoa and mix 30 seconds on speed 4 or until mix well.
Add boiling water and mix well for another couple of seconds
Add oats and combine well again for another couple of seconds (you may need to use the spatula)
Roll small bits of the dough into balls and press with a fork to flatten (see photo)
Bake in a preheated oven at 180 deg cel for 20 – 25 minutes.
Once all the biscuits are baked, place all onto a oven tray, switch oven off and leave in hot oven to dry out until oven is cool. Cool biscuits completely before adding the chocolate.
Place chocolate in bowl and mix on speed 9 until finely chopped. Then melt - 4 minutes on speed 2 scraping down sides after 2 minutes.
Sandwich together or dip / drizzle with melted chocolate
Enjoy - they are VERY YUMMY!
