Sarah's Chocolate Mud Cake

  • 240 grams plain flour
  • 65 grams unsweetened cocoa powder
  • 1&1/4 teaspoonsbaking soda
  • 3/4 teaspoons salt
  • 170 grams unsalted butter, softened
  • 350 grams brown sugar, firmly packed
  • 2 eggs, large
  • 1 teaspoons vanilla essence
  • 1&1/3 water, cups
  • icing sugar, for dusting

Recipe's preparation

  1. Preheat oven to 180degrees celsius
    Grease a 9 inch round cake pan
  2. Place;
    Flour
    Cocoa
    Baking soda
    Salt
    into Thermomix Closed lid"Closed lid" Counter-clockwise operation"Counter-clockwise operation" SP5, 10 secs
    Set Aside
  3. Place;
    Butter
    brown sugar
    into Thermomix Closed lid"Closed lid" Counter-clockwise operation"Counter-clockwise operation" SP5, 2 minutes until pale and fluffy
    add eggs one at a time beating until mixed through
    add vanilla beat until mixed through
  4. with lid locked and mixing on SP5, 2 minutes
    alternate the flour mix and water - beginning and ending with flour
  5. Pour batter into the prepared pan
    Bake for 55-60 mins - until the cake is springy to touch
    Cool in the pan on a wire rack for an hour, then invert onto a wire rack
    Dust with icing sugar before serving
