Ingredients
Brownies
- 110 g coconut oil
- 1 sweet potato, quartered
- 2 eggs
- 80-100 g honey, adjust sweetness to taste
- 2 tsp vanilla
- 40 g Cocao powder
- 1/2 tsp baking powder
- 1/4 tsp bicarb soda
- 3 tablespoons Coconut Flour

Preheat oven to 180 degrees.
Grease a baking tray with coconut oil. I used a loaf tray approx 15 x 25cm.
Add sweet potato to bowl. Grate on sp5, 6 secs.
Add eggs, vanilla, honey and coconut oil, mix sp 5, 5 secs or until well combined.
Add cacao, baking powder, bicarb soda and coconut flour. Mix sp 5, 5 secs, or until well combined.
Once combined, pour into prepared baking tray.
Bake in oven for 25 mins. Remove from oven and cool for 5mins before removing. Cut into squares.

Serve with coconut yoghurt, or coconut custard. Would also be great topped with Quirky's raw chocolate as a ganache.

I made this tonight super nice, a bit too gooey, a little less coconut oil Next time. Look forward to having some tomorrow, might harden up when in goes in the fridge.
