Ingredients
- 120 gram medjool dates
- 1 sweet potato, 2-3 cups when grated
- 2 eggs
- 100 gram Melted Coconut Oil
- 2 teaspoon vanilla extract
- 1/2 cup raw cacao powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 40 gram Coconut Flour

Preheat oven to 185oC
Place dates in bowl and chop 10sec Sp8.
Peel Sweet Potato and cut into pieces. Place in bowl and grate 5 sec Sp 7.
Add eggs, vanilla and coconut oil into bowl and mix 5sec, rev Sp4.
Add cacao powder, baking powder and baking soda and mix 5sec, rev Sp4.
Once combined, pour mixture into a lined baking tin and cook for 20 mins. Let cool for 5-10 mins in tin the transfer.
Tip
These are not overly sweet, so you could add some medjool dates, or even coat with BCB ganache.

Rachelleyshell: I had the same thought. I used 760g and it didn't quite set, I think I'd try 500 next time. Hopefully that helps.
Sweet potatoes vary so much in size. Can you give a weight range? It's hard to know how much will make 2-3 cups of grated sweet potato.

I loved this recipe and will DEFINITELY make it again.
I doubled the dates and cacao, added some choc chips and it was incredible- moist and decadent, but also relatively healthy.
Next time I might add some chia to help bind it a little better (it was quite crumbly), but that's it. A massive winner.
In my opinion you can also substitute coconut oil for another oil if you wish, I used olive oil, but rice bran would no doubt work also.
Easy and delicious. Didn't have coconut flour so used 1 cup flour. Also added dark chop chips. Love that it is refined sugar free.

Loved this, was a big hit in my family. The response I got was that it was fluffy and gooey, just like a brownie should. When I told my husband what was in it, he was really suprised. If you like sweeter, just add 200g medool dates. Perfect!
I handed them out and all the comments I got back were... “these are probably the best brownies I’ve ever tasted.. so yummy, light and fluffy and there’s no way that I would’ve guessed that they had sweet potato in them!”

Making these right now - it seems you've left off when to add the coconut flour? I assume it's when you add the cacao power?
So yummy & the kids loved them - however, i didn't tell them that they had sweet potato in them!!!!
These were delicious! I added the coconut flour in the last step, even though I didn't see it listed in the method? Also had 1/3 cup of dark chocolate chips folded through at the end as I had them to use up. I baked it a little under to make sure it was moist and fudgey. Mr 4 can't get enough and is none the wiser that it's healthy Thank you for sharing
