Ingredients
- 125 grams Butter
- 190 grams brown sugar
- 1 tsp Vanilla Paste/Extract
- 2 eggs
- 250 grams pitted dates
- 320 grams water
- 275 grams Self Raising Flour
- 1 tsp bicarbonate soda
Butterscotch sauce
- 150 grams brown sugar
- 300mL cream
- 125 grams Butter
Caramel sauce
- 150 grams brown sugar
- 300 thickened cream
- 1/2 tsp Vanilla Paste/Extract
- 60 grams Butter

Pre heat oven 180 degrees Celsius.
Insert butterfly. Beat butter, sugar and vanilla in TM speed 3 till pale and creamy.
Beat in eggs well one at a time speed 4.
Place mixture in separate bowl. Take out butterfly.
Place dates and water into TM, bring to the boil 100 degC "Gentle stir setting" approx 7 mins.
Chop mixture 3 seconds speed 4.
Set TM to speed 4 "Counter-clockwise operation" and add bicarbonate soda, flour, butter/sugar mixture one at a time till combined.
Spoon into greased cupcake tray.
Bake in oven for about 35-40 mins. Check with skewer.
Place all ingredients in TM, bring to 100 degC scrape down sides then cook for 2 mins on 50degC.
