Ingredients

Cake Batter

  • 250 g carrots, peeled
  • 1/2 fresh pineapple, peeled, cut in pieces
  • 360 grams canola oil
  • 4 eggs
  • 1 vanilla bean pod, split & scraped
  • 375 grams flour
  • 500 grams caster sugar
  • 1 level tsp salt
  • 1 1/2 level tsp baking soda

Frosting

  • 20 grams pistachios, shelled
  • 20 grams walnuts
  • 250 grams cream cheese
  • 180 grams Butter
  • 250 grams icing sugar
  • 1/2 lemon
  • 1 level teaspoon lemon zest

Recipe's preparation

    Cake
  1. ▪︎Preheat oven to 180°c
    ▪︎Grease/line a 8" round cake tin
    ▪︎Place carrot into mixing bowl
    • Grate for 6 seconds on speed 5
    • Place aside in a bowl
    ▪︎Place pineapple pieces into mixing bowl
    • Chop for 7 seconds on speed 7
    ▪︎Add carrots to mixing bowl
    ▪︎Add remaining wet ingredients
    • Mix for 6 seconds on speed 5 on reverse mode
    ▪︎Add dry ingredients
    • Mix for 10 seconds on speed 5 on reverse mode
    ▪︎Pour mixture into cake tin
    ▪︎Bake for 45-60 minutes (varys, depending on oven) or until a skewer inserted is clean
    ▪︎Allow cake to completely cool
  2. Frosting
  3. ▪︎Add pistachios & walnuts to mixing bowl
    • Chop for 4 seconds on speed 6
    • Place aside in a bowl
    ▪︎Add cream cheese, butter, icing sugar & lemon zest to mixing bowl
    ▪︎Squeeze lemon juice into mixing bowl
    ▪︎Mix for 15 seconds on speed 5
    ▪︎Spread frosting onto cake
    ▪︎Sprinkle with pistachios & walnuts to garnish
  4. Best served warm with a dollop of cream or yoghurt. Enjoy!
