Ingredients
CARROT, DATE & SULTANA LOAF
- 300 grams carrots
- 100 grams pitted dates
- 150 grams Self Raising Flour
- 1 teaspoon bicarb soda
- 1 teaspoon ground cinnamon
- 100 grams brown sugar
- 100 grams sultanas
- 2 eggs
- 100 grams vegetable oil

Preheat Oven to 160 degrees
Grease a loaf tin
Place Carrot and Dates in TM bowl and grate 10 Seconds/Speed 5 scrape down slides
Add Flour, Bicarb Soda & Cinnamon and mix 15 Seconds/Speed 7
Add Brown Sugar and Sultanas and mix 10 Seconds/Speed 3
Add eggs and Oil and mix 20 Seconds/Speed 4
Pour mixture into prepared loaf tin and bake for 55-60 min or until cooked (I had to cook for 70 min but I always need to add 10 min with my oven)
Turn onto wire rack to cool
You could always add nuts also but my family don't like nuts.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. I made this for a work morning tea and everyone loved it. Made it with GF flour and iced with the cream cheese icing. Absolutely delicious 😀
I ran out of carrots so added pumpkin instead and grated for 20 seconds on 5.
I cut down the oil by 20ml and the sugar by 20gms
I made into muffins and cooked at same temp for approx 30 mins
The mix made 9 large muffins
Really nice and moist
