Healthy Carrot Cake

  • 300 grams carrots
  • 100 grams pitted dates
  • 100 grams cashews, unsalted
  • 150 grams Self Raising Flour
  • 1 teaspoon bicarb soda
  • 1 teaspoon ground cinnamon
  • 1 cup Shredded Coconut, Plus extra to sprinkle on top
  • 100 grams sultanas
  • 2 eggs
  • 100 grams vegetable oil

Recipe's preparation

    Thermo-cat Jemima's Healthy Carrot Cake
  1. Preheat Oven to 160 degrees and grease a loaf tin

    Place Carrots, Dates and Cashews in TM Bowl and grate 10 seconds/speed 5, scrape down slides

    Add Flour, Bicarb Soda and Cinnamon  and mix 15 seconds/speed 7

    Add the cup of Shredded Coconut and the Sultanas and mix 10 seconds/speed3

    Add eggs and Oil and mix 20 seconds/speed 4

    Pour mixture into prepared loaf tin and sprinkle with extra Shredded Coconut, then bake for 55-60 min or until cooked (I always have to cook everything at least 5 min longer in my oven)

    Turn onto wire rack to cool

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     sorry to have taken so long to reply. I didn't think anyone had made anything I had put up tmrc_emoticons.) I didn't do any of it in reverse as that's how my kids prefer but I guess that is a personal choice. Thankyou for trying my recipe.

    Just baked this cake and it looks and tastes quite nice.  Thank you for the very clear recipe however we did wonder if any of the preparation mixing steps were meant to be in reverse.  The reverse symbol doesn't appear in the recipe so we took a guess and mixed a couple of steps, after the first one, in reverse just so it wouldn't become too smooth however perhaps it was meant to be smooth?  We've been eating this cake for a couple of days now and it remains very moist and nicely flavoured.
