Ingredients

Base

  • 250 g SR flour
  • 200 g sugar
  • 140 g Butter, Cubed

Mixture

  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 1/2 tsp bi-carb soda, Dissolved in milk
  • 200 g Milk

Icing

  • 250 grams Icing Sugar or Raw Sugar
  • 1 1/2 tablespoons water
  • 2-3 drops pink food colouring

Recipe's preparation

    Base
  1. Preheat oven to 180 degrees.

     

    Mix flour, sugar and butter for 15 seconds on speed 6 or until resembles breadcrumbs. Press half the mixture into a lined lamington tray. Leave the other half in bowl for mixture. 

  2. Mixture
  3. With half the base mixture still in the bowl add the rest of the ingredients and mix for 20 seconds on speed 5. Pour over the base and cook at 180 for approximately 25 minutes or until cooked through.

  4. Icing
  5. Make icing sugar if necessary by milling raw sugar for 10 seconds on speed 10. To get a very fine sugar suitable for icing you might like to mill for slightly longer.

     

    If using bought icing sugar, mix for a few seconds on speed 3-4 to remove lumps and aerate. With the blades running on speed 2-3, add water through the hole in the lid and continue mixing until smooth and at desired consistency. Scrape down bowl as necessary. Add food colouring and mix until a consistent colour.
