  • 2 --- eggs, Large
  • 175 g Milk, Full Cream (add more to suite)
  • 200 g self-raising flour
  • 100 g caster sugar
  • 1/2 level teaspoons vanilla extract

Recipe's preparation

    Mixture Preparation
  1. Add 2 Eggs to Closed lid"Closed lid"
  2. Add 100 grams of Milk to Closed lid"Closed lid"
  3. Insert Measuring Jug
  4. Set Thermomix to: 1. Speed = 8; 2. Temp = 40deg; 3. Time = 5sec
  5. Using the Spatula, scrape down the edges of the mixing bowl
  6. Add 200grams of self raising flour
  7. Add 100grams of caster sugar
  8. Insert measuring cup
  9. Set Thermomix to: 1. Speed = 1; 2. Temp = 40deg; 3. Time = 15sec
  10. Set Thermomix to: 1. Speed = 4; 2. Temp = 40deg; 3. Time = 15sec
  11. Check consistency of mix; use spatula and scrape down endges of mixing bowl; add 75 grams of additional milk (more if necessary until required consistency is achieved) NOTE: repeat previous step if necessary)
  12. Add 1/2 tspn of vanilla extract
  13. Set Thermomix to: 1. Speed = 4; 2. Temp = 40deg; 3. Time = 30sec
  14. Scrape down edges of mixing bowl and prepare to cook
  15. Cooking Pikelets or Pancakes
  16. Prepare fry pan on medium heat (4-5/10)
  17. Use small amount of butter to greese the pan
  18. Add mix to pan in portions of required size
  19. When small bubbles appear on surface of mix (or just prior to opening on surface); flip the mix for cooking on opposite side
  20. Cook the opposite side of the pancake/pikelet until desired appearance is met
  21. Serving
  22. Serve hot with desired topping

Tip

Add additional Milk to obtain the consistency required for Pancakes and/or Pikelets

Makes approx 8 Pancakes / 12 Pikelets (double qty's to suite)
