- 2 --- eggs, Large
- 175 g Milk, Full Cream (add more to suite)
- 200 g self-raising flour
- 100 g caster sugar
- 1/2 level teaspoons vanilla extract

- Add 2 Eggs to "Closed lid"
- Add 100 grams of Milk to "Closed lid"
- Insert Measuring Jug
- Set Thermomix to: 1. Speed = 8; 2. Temp = 40deg; 3. Time = 5sec
- Using the Spatula, scrape down the edges of the mixing bowl
- Add 200grams of self raising flour
- Add 100grams of caster sugar
- Insert measuring cup
- Set Thermomix to: 1. Speed = 1; 2. Temp = 40deg; 3. Time = 15sec
- Set Thermomix to: 1. Speed = 4; 2. Temp = 40deg; 3. Time = 15sec
- Check consistency of mix; use spatula and scrape down endges of mixing bowl; add 75 grams of additional milk (more if necessary until required consistency is achieved) NOTE: repeat previous step if necessary)
- Add 1/2 tspn of vanilla extract
- Set Thermomix to: 1. Speed = 4; 2. Temp = 40deg; 3. Time = 30sec
- Scrape down edges of mixing bowl and prepare to cook
- Prepare fry pan on medium heat (4-5/10)
- Use small amount of butter to greese the pan
- Add mix to pan in portions of required size
- When small bubbles appear on surface of mix (or just prior to opening on surface); flip the mix for cooking on opposite side
- Cook the opposite side of the pancake/pikelet until desired appearance is met
- Serve hot with desired topping
