Add sugar to mixing bowl.
Add molasses to mixing bowl.
Mix 5 seconds/speed 7/MC on.
Scrape down sides of mixing bowl.
Mix another 5 seconds/speed 7/MC on if needed.
Brown sugar
Tip
For dark brown sugar, use up to 100g molasses. You may need to start at a lower speed and work your way up to speed 7.
If you prefer a finer granule, mill the sugar for approx. 2 - 3 seconds on speed 9 before adding the molasses.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Thanks for sharing, I have tried a couple of different recipes and this one is better, but I reduced the molasses to 40g and found it to be the closest to store bought brown sugar. I think white sugar works better than raw

I didn`t have any brown sugar to make a caramel slice and then I came across this recipe! I used raw sugar instead of white because that`s all I had and I was concerned it would be too strong in flavour as my brown sugar came out quite dark, but it tastes great. I have a jar of molasses I did`nt know what to do with, so now I`ll be making my own brown sugar as required, Thank you!
