Ingredients

Pasta Sauce

  • 1 onion, Peeled and quartered
  • 2-3 cloves garlic
  • 15 grams olive oil
  • 1/2 bunch basil
  • 1/2 bunch Oregano
  • 1 red capsicum, Deserved and cut into large pieces
  • 2 carrots, Roughly cut
  • 2 Zucchinis, Roughly cut
  • 1 can diced tomatoes
  • 1/2 teaspoon black pepper, Freshly ground
  • 1 teaspoon sea salt, Fine
  • 300 grams tomato paste

Recipe's preparation

  1. Add onion and garlic to bowl. Chop 3 secs/speed 7/MC on. Scrape down sides.

     

  2. Add olive oil.  Cook minutes/Varoma/speed 1/MC on.

     

  3. Add basil and oregano. Chop 5 secs/speed 7/MC on. Scrape down sides. Chop again if needed. 

     

     

  4. Add capsicum, carrots and zucchinis. Chop 3-4 secs/speed 7/MC on. Scrape down sides. Chop further if required.

     

  5. Add tinned tomatoes, tomato paste, salt and pepper.  Cook 15 minutes/Varoma/speed 1/MC off, simmering basket on top.

     

  6. If not using immediately, either freeze or store in preserving jars. Fills approximately 3-4 jars.  Approximately 4 portions per jar.

     

Tip

If storing in preserving jars, prepare jars as follows:

Clean jars fully. 

Sterilise jars by either boiling for 5 minutes or in a steam steriliser for at least 5 minutes. 

Place jars and lids on a clean tea towel on a baking tray and dry in an oven heated to 75-100 degrees for approximately 15 minutes. 

Once each jar has been filled, tighten lid and turn jar upside down for at least 15 minutes. 

Once cool, store pasta sauce in a cool, dry place.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     I use preserving jars that I bought down at my local reject shop. I sterilise both the lids and the jars in my baby bottle microwave steriliser then dry in the oven.

    Hi Lightbee, thanks for the recipe. Just wondering what jars you use for preserving the pasta sauce? I have Ball mason jars, but they say that you cannot boil the lids to sterilise. I imagine that the lids cannot also be put in the oven. I want to find jars with lids that can be sterilised. Thanks!
