Ingredients
Waffle Mix
- 220g Self Raising Flour
- 110g Milk
- 250g plain yoghurt
- 2 eggs
- 50g Butter
savoury variant
- 1/2 brown onion, peeled and quartered
- 200 grams corn kernels, drained if using tinned
- 100 grams Tasty cheese, grated

We really like this version of waffle mix usually having them sweet but I wanted something different today having an abundance of produce to use up.
I used the kernels from 2 large cobs of corn, removing them with a sharp knife.
Separate the eggs & place the egg whites into a clean TM bowl, place the butterfly on top & mix for 1 min speed 4 or until stiff peaks form. scape egg whites from the bowl & set aside.
If you are using the thermomix to grate your cheese, add cubes to the bowl and mix speed 6 for 5 seconds or how ever you would normally do this and set aside.
Add onion quarters to the bowl and mix 3 seconds speed 7, scrape sides down.
Add butter to the TM bowl & melt for 2 mins 50 degrees speed 2. (it may take longer if you butter is really cold to start with.)
Add your yoghurt, corn, cheese, milk & egg yolks, mix for 5 secs speed 5. Add flour & mix for another 5 secs speed 4.
Add the butterfly in & the egg whites mix on "Gentle stir setting" for 5 secs then "Counter-clockwise operation" "Gentle stir setting" for 5 secs.
Transfer mix to a bowl, I find it easier to get spoonfuls out of a regular bowl than the thermomix bowl for this recipe.
Heat up the waffle iron & cook till brown.
Serve with crispy bacon, fresh tomato and avocado salad & perhaps a dollop or sour cream or creme fresh with HP sauce or sweet chilli for those more adventurous people!
