Rice Milk
- 50 grams brown rice
- 1000 grams water, (400g then 600g)
Optional sweeteners
- almonds, (reduce quantity of rice so total rice + almonds = 50g)
- 1 date
- 1 tablespoon honey
- 1 tablespoon raw sugar

Cook rice & 400g water 20mins/100C/speed 2.
Blend 3mins/speed 10.
Add 600g water and blend 1 min, slowly increasing from speed 1 to 10.
Optional:
- use a mix of almonds and rice in step 1 (total weight 50g)
- add a sweetener (date, sugar, honey) in step 2.

Tip
Keep in the fridge and give a bit of a shake before you use as it will settle a bit on the bottom.
There are quicker recipes that blitz the rice before cooking which I use if I'm in a hurry, but I think this one results in a nicer, creamier texture.

Jane Windeyer: Hi Jane, it is my understanding that any fresh milks made from nuts, rice or coconut will only last a few days in the fridge, best kept in a glass container. I had this one in the fridge for three days and it was ok, unsure if it would've been ok still at day four.

Hello, how long will this last in the fridge?
I made this a couple of days ago and the taste is quite unique and will take time getting used to but it turned out nice and thick. I added a little rice malt syrup to sweeten it up just a little.

I use this recipe often for my son who has lots of allergies....I find it makes a nice creamy milk and I don't need to add any sweeteners.. Thanks for sharing
