Ingredients

Gluten free focaccia

  • 170 g water
  • 10 g caster sugar
  • 10 g dried instant yeast
  • 200 g gluten free flour
  • 50 g tapioca flour
  • 1 tsp xanthan gum
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 15 g olive oil
  • 6 g apple cider vinegar

Recipe's preparation

  1. Oil a mixing bowl and put aside
  2. Add water, caster sugar and yeast into mixing bowl
  3. Mix 2 mins / 37 deg / sp 1
  4. Add GF flour, tapioca flour, xantham gum, baking powder, salt, olive oil, apple cider vinegar
  5. Mix 10 sec/ sp 4
  6. Dough mode"Dough mode" 1 min
  7. Using spatula move mixture into oiled bowl. Use spatula to form a ball.

    * Mixture will be sticky *
  8. Cover with glad wrap and leave in warm place until doubled in size (approax 1 hr)
  9. Place dough onto baking tray and use oiled hands to press dough out into a rectangle approax 1/2 cm thick.

    * Add cheese or garlic or other toppings if wanted *
  10. Bake in oven at 200 deg for 20-25 mins until golden and crispy.

    Can also be cooked in air fryer - see tips

Tip

If wanted sprinkle small amount of GF polenta on tray before adding dough to create a crispy base.

Topping ideas: garlic and cheese, cheese and rosemary, thinly slice potato and cheese

To make a garlic focaccia garlic infused oil can be added instead of plain olice oil in mixing stage

Air fryer cooking instructions:
If have a baking tray insert use this.

Use oiled hands and gentle press and spread out dough into tray insert.
* if you top with cheese cover with alifoil for first 8 mins and then uncover for another 6 mins.

Temp: 180 deg 15 mins. check to make sure browned and cooked if need be extend time by 2 minutes.
