Ingredients

DOUGH

  • 250 g full cream milk
  • 50 g Butter, (softened)
  • 50 g white sugar
  • 30 g instant yeast, (or 2 tbps)
  • 500 g white bakers flour
  • 1 tsp salt

FILLING

  • 300 g sliced ham, (or enough slices to cover the dough)
  • 100 g Olives Spanish Stuffed, (Pimiento)
  • 50 g sultanas, (or raisins)
  • softened butter, (to spread over dough)
  • egg wash, (1 egg yolk with cream)

Recipe's preparation

    DOUGH
  1. Prepare a baking tray with a sheet of baking paper. Place milk, butter and sugar into mixing bowl and mix 1 min/speed 2 / 37º. Add yeast 10 sec / speed 2. Add flour and salt 20 sec / speed 6. Then knead 3 minutes dough function

  2. Turn dough out onto a ThermoMat or oiled/floured bench & punch out any gases that may have formed and roll out dough into a rectangle approx. 30 x 40cm.

     

  3. You can also make two medium 'logs' by dividing the dough

  4. FILLING
  5. Butter your rolled out dough, leaving about 1cm border. Cover the dough with the ham, olives and sultanas.

  6. Roll dough from the longest side into a tight log. Close the ends but putting the ends to the inside so the mixture doesn’t come out.

    Place the ‘log’ on the baking tray. Pinch with a fork to let air in.

    Place the tray in a warm moist area and let it prove for 1 hour.

  7. Once grown, brush the top of the bread with the egg wash and place in a preheated oven 170º for 45 min. After this time, take out the ‘log’ and place on cooling rack

Tip

Optional: I would personally take it out of the oven every 15 min to brush the top of the bread with the egg wash. You can make some decoration (leaves) using some leftover dough. For a different version spread some Cream Cheese on the dough after the butter.

Note: The term egg wash simply means an egg, or a part of an egg, that has been thinned with a bit of water, milk, or cream and is used to promote browning or to create a glossy shine, or both.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
