Ingredients
Keto Bagels (Almond flour based)
- 170 g Almond Flour
- 1 tbsp baking powder
- 255 g mozzarella cheese (shredded, not too wet), 3 cups shredded (I buy preshredded)
- 57 g cream cheese, softened
- 3 eggs, divide 2 for dough + 1 for egg wash
- 2 tbsp everything bagel seed mix, Thermomix has a recipe for this, but I just purchased a premade seed mix from a store
- 2 tsp dried instant yeast, sometimes referred to as quick yeast
Monk fruit sweetener
- 1 tsp dried instant yeast, if desired. You can also use an alternate sweetener of choice.

- Preheat your oven to 200°C (400°F).
Line a large baking tray with parchment paper and set aside. - Place warm water, sweetener and yeast into a small bowl and combine. Set aside in a warm place to activate for 10 minutes.
- In a separate small bowl, whisk together the almond flour and baking powder. Set aside.

- Place the mozzarella cheese and cream cheese into the Thermomix bowl.
Heat for 3 minutes | 90°C | Speed 2, or until the cheeses have mostly melted. - Add the almond flour mixture and 2 of the eggs into the Thermomix bowl with the melted cheeses.
Mix for 10 seconds | Speed 5, or until combined.
Knead the dough for 1 minute using the Dough (kneading) function.
If the dough seems a little sticky, scrape down the sides and knead for an additional 30 seconds."Blend"

- Dust a clean kitchen surface with a little almond flour, or use parchment paper to put the dough on.
Transfer the dough onto the surface and divide it into 8 equal portions.
Roll each portion into a short “rope” and connect the ends to form bagels.
This dough can get really sticky. I spray cooking oil on my hands and the cutting board to help get it to roll.
Place bagels onto your lined baking tray. - In a small bowl, whisk the remaining egg.
Brush each bagel top with the egg wash.
Sprinkle with sesame seeds (or any other preferred topping). - Bake the bagels for 12–15 minutes, or until they are lightly golden on top and firm.
Remove them from the oven and allow them to cool completely before slicing.

Tip
Add an extra egg for an egg wash, it makes it look browned on top.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
