Ingredients

  • 395 g condensed milk, (1 can)
  • 1/2 tsp Rosewater, (Rosé essence)
  • 400 g dark chocolate, (Cadbury melts are great)
  • 1/2 bar Copher
  • 250 g Dessucated Coconut
  • 400 g Glazed cherries, (Red)
  • 1/2 tsp pink food colouring

Recipe's preparation

  1. Melt half the chocolate and 1/4 bar of copher in the TM at low temperature, speed 2
  2. Spread mixture evenly over bottom of a cooking tray (lined with baking paper or well greased) and place in fridge to set.
  3. Dice the cherries in the TM for 5 seconds on speed 3-4 (more or less depending on texture you want).
  4. Add coconut, condensed milk, rosewater and food colouring. Mix on speed 1 until uniformly pink.
  5. Scrape batter out onto set chocolate base and spread evenly with fingers. Be careful not to press too hard or the base may crack.
  6. Return to fridge to set
  7. Repeat step 1 with remaining chocolate and copher
  8. Poor latest chocolate mixture over the top of the slice and return to fridge to set
  9. Once set, remove from fridge and slice into squares as desired.

Tip

It helps when slicing to first let the slice warm a little, and also to use a large knife dipped in hot water to cut through without cracking the chocolate.
