Ingredients
Ice-Cream
- 150 g sugar
- 150 g 70% Dark Chocolate, broken in pieces
- 1 teaspoon chilli powder, adjust to taste
- 2 egg yolks
- 500 g thickened cream
- 1 teaspoon vanilla extract
- pinch salt
Strawberry Jam
- 100 g strawberry
- 50 g sugar
Fresh Raspberries (optional)

1) Place sugar and chili into the mixing bowl and mill for 10 sec/speed 9
2) Add Chocolate and grate for 10 sec/speed 9
3) Add egg yolks, thickened cream, vanilla extract, salt and cook for 6 min/80 degrees/speed 4.
4) Pour ice cream mixture into a container, place lid on. Place into freezer for 4 hours until firm but not frozen.
5) Wash bowl and dry.
Strawberry Jam
1) Place strawberrys and sugar into mixing bowl and cook for 6min/100 degrees/speed 1
2) Mix strawberry jam for 10 sec/speed 4
3) Pour into a small container and place in the fridge until the Ice Cream mixture is ready.
Ice cream assemberling
1) Remove ice cream from freezer and cut into ice cube sized pieces. Place into mixing bowl and blend for 20 sec/speed 9, then 10 sec/speed 4.
2) Return half of the ice cream mixture back to the container. Place dollops of your strawberry jam onto the top of your ice cream. Use a knife to gently swirl the strawberry mixture through.
3) Repeat with remaining ice cream and strawberry jam.
4) Place back into the freezer and leave to set overnight.
Serve with fresh raspberries.

Tip
Chili can be adjusted to personal taste. I use home made chili powder.

This was amazing! It turned out perfectly the first time. I used 1 teaspoon of chilli powder and found it slightly too much. Next time I will try 3/4 teaspoon of chilli. I didn't bother with the strawberry twist.
