Ingredients

Sweet Shortcrust Pastry

  • 345 g plain flour
  • 150 g unsalted butter, chilled, roughly chopped
  • 75 g icing sugar
  • 4 egg yolks

Filling

  • 300 g frozen cherries, thawed on paper towel
  • 2 eggs
  • 3 egg yolks
  • 1 tsp Vanilla Bean Paste
  • 200 g dark chocolate
  • 300 g thickened cream

Recipe's preparation

    Pastry
  1. Preheat the oven to 180ºC fan forced.

  2. Place flour, butter and icing sugar into mixing bowl and blend 10 sec/speed 6, or until mixture resembles breadcrumbs.

    Add the egg yolks and knead 1 minute/Closed lid"Closed lid" /Dough mode"Dough mode" .

    Transfer dough to bench and lightly knead into a tight ball.

    Wrap in plastic wrap and place into the refrigerator for 30 mins.

    Once chilled, roll out two-thirds of the dough between 2 sheets of baking paper.

    Press into pie tin. Cover with baking paper, add pie weights or rice and cook for 10 minutes.

    Remove the baking paper & pie weights and cook for a further 10 minutes.

  3. Filling
  4. Once the pastry is out of the oven:

    Combine the eggs, yolks and vanilla and mix 15 sec/speed 5.

    Set egg mixture aside. (Wash thermomix bowl)

    Place chocolate in bowl, broken into squares, and grate, 10 sec/speed 8.

    Add cream and cook 4 mins/50 deg/speed 3.

    Add the egg mixture to the chocolate mixture and mix 10 sec/speed 5.

     

    Place the thawed cherries over the base of the pie.

    Slowly pour the chocolate mixture over the cherries.

    Roll the remainder of the pastry out to a circle big enough to fit the top of the pie dish.

    Cut into strips approx 1cm in width.

    Place the strips over the pie for a criss cross effect.

    Cook in oven for 35 mins, 160ºC, fan forced.

Tip

This pie is best served with vanilla ice cream!

It is tasty both hot and cold, however it seems to be a bit runny when it is straight out of the oven (as per picture).

When it cools it sets firmly and is just as delicious!

    Very rich recipe. Tastes nice but you need to have small portions.

    the pastry came out a bit dry when rolled, but still tasted nice once cooked. 

    My pie was still runny even after leaving it sit for one hour.
