Ingredients
- 80 g pitted dates
- 80 g Shredded coconut
- 80 g walnuts
- 1 level tsp Vanilla Bean Paste (or Extract)
- 3-5 drops almond essence (optional), Or essence of your choice
- 3 leaves Fresh mint (large), Optional
- Raw whole macadamia nuts, About 21 pcs
Coating
- dark chocolate, Broken into small for quick melting

Place all ingredients into TM bowl except the raw macadamia nuts and chop on speed 9 for 10 seconds.Fill 3x7 ice cube tray, push a whole macadamia in the middle and top with more da-coco-nut mixture. Place tray in the freezer for around 10 minutes.
Melt a block dark chocolate in microwave for 90 seconds and mix with spoon for smoother texture (you can add 1 tbsp of canola oil (vegan) or 1 tsbp butter for a shinier coat).
Remove truffles from ice cube tray and place on plate lined with baking paper. Dip half ( or all) of the truffles into melted chocolate and place back in the freezer for another 10 minutes or until set.
