- 200 grams quality dark chocolate, broken into pieces
- 3 tablespoons water
- 4 Eggs, separated, room temperature
- 1 pinch salt

1. Add dark chocolate and water to TM Bowl and heat 4-6 mins/50 degrees/speed 2 or until just melted. Scrape doen sides of mixing bowl with spatula.
2. Add egg yolks and mix 15 seconds/speed 4 then transfer to a large mixing bowl. Clean and dry TM Bowl thoroughly.
3. Insert butterfly whisk and place egg whites and salt into TM Bowl, whip 3 mins/speed 3.5 until stiff peaks form.
4. Add whipped egg whites to reserved chocolate mixture and carefully fold in using spatula. Pour into serving bowls or glasses and refriderate for at least 3 hours. Garnish as desired and serve.

This is a great recipe for low/no sugar diets and high protein diets - substitute the chocolate with low/no sugar chocolate and add sweetener (equivalent to 50 grams). If using powder form of sweetener add it at step 1, if using granular sweetener then mill it 10 seconds/speed 10 prior to step 1.
Variations:
Chilli Chocolate Mousse - Add ground chilli power to taste at step 2.
Add 2-3 tsp of liqueur of your choice or rum.
Fold in grated orange zest or choc chips in at step 4 after folding in egg whites

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Followed the recipe exactly and my chocolate went chunky. Folding in the egg whites was impossible and had to press it into the spatula to try to smooth it out and together. Ended up with chunky mouse and not enough to fill 3 small jars. Used a good quality organic 70% dark cocoa chocolate and farm fresh eggs. Not sure what went wrong.
