I was in my local coffee shop enjoying a latte, when I ordered one of this on the side, I loved them so much I bought another and complemented the cafe staff. She whispered to me "it's just dates and walnuts".
Oh really? At $2 a ball I reckon I could recreate these at home, and voila the results!
They are perfect for snacks, my kids love them for after school. They freeze well. So you could easily make a big batch and store them snack sized ziplock bags to then grab as needed. Going to the gym, the park, or.. you know sneaking them back into the coffee shop.
Now this is my first ever go at creating a recipe in the thermomix so go easy on me.
Place pitted dates and blend for around 20 sec on speed 7. Listen for the machine to change sound. STOP immediately when it does.
Add walnuts and mix for 3 sec on speed 6
Reverse blade "No counter-clockwise operation" and mix for 10 sec on speed 1
Transfer into a bowl and use wet hands to roll into balls.

Tip
You can dip them in desscated coconut if you want. But I think they are brillaint as is.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Quick, easy, delicious! Had to add a bit of water to my mixture to be able to roll into balls. Will definantly make again.
